Today’s special guest is…..

 

The elephant is a funny bird
It flits from bough to bough
It makes its nest in a rhubarb tree
And whistles like a cow.

Today’s guest cake is  a rhubarb & sour cream cake, just perfect for using up all of that spare rhubarb you have lurking in the kitchen, or if you are in danger of being crushed by a mountain of the stuff; “ I have to pick it so it grows some more” I am told. Don’t make yet another rhubarb crumble, make this cake. Even my rhubarb hating daughter loves it.

021 017 022 028The recipe can be found on the BBC Good Food site. It is spongy on the bottom with nicely tart chunks of rhubarb mixed in, then topped with a sugary nutty crumbly topping. Enjoy it for pudding with a dollop of creme fraiche. Awesome!

  1. The B stands for Baker. I'm surprised you find time for gardening with all this cake baking! Make sure you choose a good 'un for Monday. I'm going to set you and Helen on a bake-off!
